Seared Scallops with Shrimps and Coconut Rice

Tonight I felt very brave and decided to make my very first scallops. I also made a round of shrimps just in case things wouldn’t turn up ok 🙂
But as I was searing the scallops I was very happy to see the golden crust forming perfectly

This was very easy, everyone should try it.
Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
Add butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops.When the pan is hot , gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. Serve immediately with a splash o lemon on the side
