Salmon Tartar and Avocado mousse

Enjoying this wonderful and tasty dish on Valentine’s Day.

Here is what you need:
450g Fresh Salmon fillet skin-off
8 Gherkins
1-2 Shallots (to taste)
10-15 Capers

How to:
Cut salmon in small pieces, set aside or cover and refrigerate until ready to serve.
Slice Gherkins and shallots into very thin pieces and set aside. In a medium bowl, mix together the shallots, dill, capers, lemon juice and finally add the salmon. Cover and refrigerate if not using immediately.
Just before serving, garnish with sliced avocado(or mousse) and chopped chives.
